My favorite as a kid was easily the Playmates Star Trek TNG Bridge, and Engineering that connected to it (but was sold as a separate set). Man, that thing was detailed, and pretty close to accurate. Always wish they would have made a TOS one.

I always wanted that Batman Forever one, though, that thing was amazing.
 
I never knew that Batman Forever Batcave or that Buffy Library existed.

GI-JOE was always great for the playsets and vehicles that might aswell have been playsets - speaking of, Hasbro made some great vehicle/playsets for Star Wars

The Big Millenium Falcon (BMF)
The Big AT-AT (BAT-AT)
and the AT-TE (from Attack of the Clones/Revenge of the Sith)
 
Yep, that's why I wanted to do a top ten for vehicles separately. There's some amazing stuff out there!
 
The most amazing playset that I never had: The USS Flagg from GI Joe. I'm pretty sure that was every kid's dream when it came out. But it was $100 at the time, and my parents said that was too expensive.

Now look at us, buying $220 figures and $500 statues.
 
I used to have the Star Trek Bridge set as well, but my favorite was the GI Joe Adventure Team Headquarters from the early 1970s. This one went with the 12 inch GI Joes and could have be yours for a walloping $13.99 new.

I had that Buffy library set for several years. I used it display all my loose Buffy figures. I miss it so much. It was stolen out of my garage a few years ago. Eventually we figured out some Vintage Stocks the theif sold my stuff to. The clerk there said they sold my Buffy library set within a day. Keep in mind it was loose and even had a little dust on it but it still flew off the shelf. An underated set from an underated line that I loved.
 
Good choice on #1, in fact all the Palisades muppets playsets (and the whole line really) are great. Pride of place in my collection, if only for the great memories, among all those expensive prop replicas and customs, is still my Dr Teeth and the Elecrtic Mayhem band and playset.

Boulder Hill from MASK was one of my favourites and the TNG Bridge; I always hoped that Playmates would have made the TOS Bridge too.
 
The 1990-designed Kenner Batcave. Technically it was created for the Dark Knight Collection, but was only released two years later for the Batman Returns line. I myself had the Batman: The Animated Series version. Such a great playset that brilliantly includes all the 1989 locations and works just as well with every repaint.
 
I didn't have it, but one of my friends had the Planet of the Apes treehouse set:

Very cool -- and great fun to play with!

Of Michael's list, the Enterprise bridge would have been my No. 1.
 
Showing my fandom here, but I've always enjoyed the three interior TARDIS sets that Character Options released for Doctor Who.

The oldest of the three is my particular favourite with a working light up time rotor in the central console, and several impressive details (not to mention opportunities to mod the thing to give it an upgrade) - but the multi-leveled 11th Doctor's interior is also a gorgeously designed piece.

The third is less impressive, being far smaller, but I find it ridiculously fun that you can basically strap the figures in and take them for a spin (the set can be carefully spun around on an in-built spindle) though perhaps the third set is technically speaking more in the vehicle class!
