The R&D for something like that is ambitious. Adding articulation would be difficult - it'd have to be some kind of seamless skin material over a frame, which might reduce its longevity. And it'd be massive. I'm not especially surprised no one's tried to make a figure of Bruce, because a statue with an open mouth like the one featured earlier in this thread probably covers most peoples' needs for a Jaws display, with a lot less complication. I'd be interested in seeing someone try, though!
 
For lack of a better thread, let me post this here.

After many many years of drooling over these busts, I finally got a Shark City Ozark Bruce bust!
The paint job is perfect, exactly the amount of gore I wanted. Really great work by Cathy and Mike.
If anybody is on the fence, do it - you won't regret it.

The second picture is to get an idea of scale on display. It fits right in.

Congrats! I thought you would have had one of these already. It really does make an impact in the detolfs when surrounded by puny human characters. Nom-Nom-Nom...

Funny that you mention that. I was just telling my wife yesterday that he feels like he belongs in my collection. Like he's been there for years, it just makes perfect sense in my mind. He doesn't stand out to me like a new figure usually does, he's immediately part of the whole.

I've never really had a "grail" type of figure since I usually buy the figures I want, and I haven't regretted not getting anything. But this I think was closest to that grail status for me. I've coveted one for years, maybe even 10+.

I know what you mean. I made a terrible 1/6 set of Quint, Hooper and Brody back in 2000 -- my first 1/6 "collection" that really started me down the path -- and ever since that time I've wanted a Bruce bust. I finally got my own Ozark bust in 2017... so about 17 years of pining. (not counting the years since the movie opened and I wanted a Jaws head to nom-nom my GI Joe and Big Jim.)
