Both series of Ghost in the Shell: Stand Alone Complex. Or, as others have already mentioned, Cowboy bebop. You can't go too wrong with either, IMO.

Also Princess Mononoke is a fantastic animated movie. Best Ive ever seen.

The only anime I can stomech. Mainly because it's so ____ing hilarious.

Wolf's Rain (post-apocalyptic endgame)
Jin-Roh: The Wolf Brigade (anti-totalitarian fable)
Space Battleship Yamato (epic classic)
Ninja Scroll (another epic classic)
Galaxy Express 999 (most epicest classic, and a damn cool movie)

And add one more for Cowboy Bebop, Samurai Champloo, and Neon Genesis Evangelion, which is the greatest cartoon ever made. Even better than BTAS.
