Not counting Nintendo soundtracks, since there's just too many great/memorable one's to list, I'll have to say that Chrono Trigger has always been one of my favorites. I still remember how amazed I was with the music (and everything else) when I first bought and played the game on SNES. Immersive music for an epic game.

I think HEALTH did an excellent job with Max Payne 3's soundtrack.

Personally love the Bayonetta Soundtrack. Never had so much fun listening to some video game music. The mix of retro smooth jazz with the rhythmic pace of J-pop and angelic choirs is one hell of a combination I would never have thought of, but by god did they make it work.
