I'm not surprised they don't. In reality while the iPhone is severely popular its allocated to just one phone carrier in the US. It'd be a neat option but might be considered too much work for a small fraction that uses it unlike places like Bank of America or Southwest where you are dealing with thousands using iPhones and the sites. If the rumors are true and AT&T loses the exclusivity rights to the iPhone and it is opened up to multiple carriers you'll see a ton of sites creating iPhone friendly sites. The thing is doing it right. Bank sites are perfect with almost all the functionality of the actual site. Sites like Playboy for example have iPhone sites that are relatively dead with the same content stuck on the page and the fact it doesn't allow users to navigate outside of the standard offerings that they provide on the iPhone pages without going through the standard site anyway. An iPhone site has to be worth it or they are just wasting their time.
