You can make as many characters as you want. I mean, this show has a lot of characters, but many of them are GoT lite -- like the cripple "Littlefinger" guy. All of the Driftmark players are a snooze. The GoT characters felt "lived-in" a lot more than these new ones.
You really can’t when it’s in itself based off a book as well.

You’re stuck between a rock and hard place - let the original story breathe or come up with your own.

We know how coming up with your own worked for the final seasons of GoT.
 
I enjoyed the last episode and seeing the dragons fight was awesome. Regardless of them saying that dragons alone won't win the war, it's pretty evident that if Vhagar was let loose, she could destroy every army and dragon by herself.
 
In general, once airborne every dragon's weakness seems to be the wings, vulnerable to severing and disabling by other dragons; and in GoT we saw what a well-aimed ballistic weapon will do more than once.

They're devastating to unprepared ground troops and fortifications but rely a lot on the element of surprise and general air superiority via tactics (cloud cover, topography, sun etc.) and likely superior numbers; hence my guess that two smaller dragons that can close on Vhagar from above or behind will make short work of her.

They just have to keep her head away from them via a third, likely sacrificial opponent or by holding her off long enough to disable one or both wings.

I'm really enjoying this show and season thus far. Sprinkling in various shocking moments like the end of this episode are part of the charm of GOT, though one of the characters who bit it (keeping this relatively spoiler free) was one of my favorites in the show, so that's a bummer. Also, the segments with Matt Smith seem like filler on the order of what they did with Arya for the longest time in the original series, but I assume they have some kind of payoff being planned. I also noticed a big parallel in how Ser Cole dominates everyone on the battlefield offscreen to Robb Stark in the first couple of seasons of the original show.

Glad I'm not the only one who realizes that Jaimie was the most despicable character in that show. Joffrey, the dude who chopped off penises, and the old dude who oversaw the Red Wedding were swell guys in comparison.
 
Although I'm enjoying it a lot, I' also getting a bit much of the men-are-silly-impulsive-patriarh-tyrants vibe...
Maybe I need to rewatch the first season, but I feel that Daemon has been nerfed quite a bit. Also, Rhaenyra seemed a lot more formidable in the first season...
