Matt I would definately go for the suede.

As for the side straps, I would go for one at the chest level, the belt will hold the bottom in place.
Could you not make the straps extra long so that they could be trimmed to whatever length is required ?

Matt This is what you need, its called Grosgrain Ribbon ( 1/4" or 6mm)

I'm not really in the market for a "pilot vest" at the moment , but the Weequay outfit is definately something I could be interested in in the future .
