I love both shows and have seen every episode since their premiers.
The original survival show, Survivorman has the far more practical survival advice for common circumstances such as surviving a flood, being snowbound in your car in the middle of nowhere, or getting lost while hunting. He often tries to put himself in the exact same circumstances of real survival stories that people have found themselves in and offers the best practical advice.
Bear Grylls is in shape and an expert mountain climber that can take the life threatening risks that would be far too dangerous for the average person. And both Les and Bear know they're going to be rescued, both have Satellite Phones and someone is always waiting for them on their deadline, ready to call Search and Rescue at a moments notice.
Man vs. Wild is planed and staged, and seems too often go for gross out "Fear Factor" moments in order to entertain.
But between the two, MvsW is much more entertaining, Survivorman can be boring at times. MvsW also goes to foreign (for me, outside the US and Canada) locals and visits my two favorites; Jungles and tropical beaches more often. Survivorman features my least favorites, Mountains and snow.
Man vs. Wild is just fun to watch.

Actually, Les Stroud ended Survivorman because of the physical toll from filming the show, but he has hinted that he may return. He's done a lot of other shows in the exact same vein before, so I wouldn't be surprised to see him on another survival show.
