I have low, technically bad lighting ... and flash takes away from the pics... how do you guys do it ?

Is it not possible with a point and shoot ? I am using a Nikon 6000
 
Tripod + posterboard + cheap desk lamps + really knowing your camera.

What's the posterboard for?

Another thing that makes all the difference is the ability to adjust shutter speed. That's a manual setting though and most point and shoots don't have it. My old cybershot did, but my Panasonic Lumix doesn't. :(

I notice I can change some settings and set a manual preset. Can you help me understand what this does. I may just not be bringing my P6000 to its limits.

Just held up some clear plastic in front of the lens :)

Posterboard for backdrops, you can also use fabric but with posterboard it's much easier to get a smooth curved backdrop which is essential for that non-horizon-line look.

Most of the Canon point and shoots you can install https://chdk.wikia.com/wiki/CHDK which will allow you to controll a lot more of the camera including shutter speed.
