I know exactly what you mean, and I agree. I'd like the same for RE2 and 3 as well. Maybe even Code Veronica too.

The only problem I could see is the fact that they'd have to do something about the zombie character behavior. With the ability to aim and shoot them in the head so easily, it wouldn't be much of a challenge. Maybe they could make them all act like Crimson Heads or Dawn of the Dead remake zombies.

I would love to see an RE2,3 and CVX remade. Sadly I think DS is the closest we're gonna get at the moment.
