Corn bread for the first round and now the rice. :woo

Smoking ham hocks is easy,just brine,season and smoke. It is making the beans that is the tough part.
I do a baked beans recipe whenever I smoke pork and the recipe usually goes like this.

Take 3 cups of navy beans and soak them for 8-9 hours then then simmer in a saucepan for another 2 hours.-set aside.

Next fry up a 1lbs of thick cut bacon(cubed),1 onion(diced) and 2 cloves garlic(minced).-set aside

Then mix together 2 cups ketchup,1/2 cup molasses,1/2 cup honey and 4 shots of jack daniels,1 tablespoon paprika,2 teaspoon cayene pepper,1 table spoon salt/black pepper and mix with beans,onions,bacon and garlic in large terracotta cooking pot.

Bake at 350 for 45 minutes- 1 hour.

**EDIT**
If you want to go the traditional route like thrifty than use a white bean recipe and add your ham hocks to the beans once they are finished smoking.

My mom used to make that in a crock pot -

throw in some ham hocks and white beans - some carrots, celery and onion and let it cook on low all day. I know she added more stuff - but I don't have the recipe...not sure what kind of broth she used....but let me tell you this - it was damn good.

Don't use smoked ham hocks, get regular hocks with the skins. Use white soup beans (navy). I could whip you up some good ones if I was there. They're tricky to cook though. I cook them using baking soda.

I love these things. I like mine poured right over a hunk of cornbread! :yess:
