Smoking ham hocks is easy, just brine, season and smoke. It is making the beans that is the tough part.
I do a baked beans recipe whenever I smoke pork and the recipe usually goes like this.
Take 3 cups of navy beans and soak them for 8-9 hours then then simmer in a saucepan for another 2 hours.-set aside.
Next fry up a 1lbs of thick cut bacon(cubed),1 onion(diced) and 2 cloves garlic(minced).-set aside
Then mix together 2 cups ketchup,1/2 cup molasses,1/2 cup honey and 4 shots of jack daniels,1 tablespoon paprika,2 teaspoon cayene pepper,1 table spoon salt/black pepper and mix with beans, onions, bacon and garlic in large terracotta cooking pot.
Bake at 350 for 45 minutes- 1 hour.
**EDIT**
If you want to go the traditional route like thrifty than use a white bean recipe and add your ham hocks to the beans once they are finished smoking.
