If I had to spend it on something now, and preorders don't count... probably Mark I or TDK OC, maybe Blade. Those are the only 3 that I missed that I still want.

Honestly though, I'd probably try to find the owner, that $500 is probably important to someone, could be their rent or something.

The realistic answer is that I'd put it towards my wedding expenses or car payments or something.

But assuming I could only spend it on some sort of collectible, I'd probably go for the Hulk Comiquette. Hopefully $500 would cover most of the cost, if not all.
