I really liked Coyote Crossing and Brotherhood. Both really great stories. Origin is a great story too. As others have said Frank Miller's miniseries with Chris Claremont was great too.

All of the above, plus the recent "Get Mystique" and the original "weapon X". Also, try to catch up with Uncanny X-force.
If I had to choose just 3 TPB, I'd go with FM & CC mini series, original Weapon X, and Old Man Logan.
