I played the whole game without auto aim and I didn't have a problem. It is certainly the best rockstar have done so far with gunplay controls, which have always been a bit clunky in their games. Other than that, I pretty much agree with your other points. RDR2 is a game to get immersed in, if you are the type of gamer not interested in fully investing in that then you won't get the best out of it, just like with the previous RDR, or with games like Skyrim or Witcher 3 or whatever. Part of the joy of these games is being in that world, investigating it, travelling around and finding stuff. 'Living it' via your gaming character, so to speak. If you are more a set objective type gamer who just wants to get through things as quickly as possible and move on to the next game, then these are probably not the kinds of games for you. And that's fine, too. But me, I'm just glad they still makes games like these that I can get lost in, particularly in an age obsessed by multiplayer, loot boxes, and 10 hour quick fire campaigns.
