I think it's because Sabine got there at night time. She left at sunset, and Ahsoka was already talking to Hera at that point. She was still speaking to Hera when Shin and her droids attacked so it doesn't look like much time had passed at all.One thing I'm still puzzled by, is we see Shin scoping out Sabine's hideout at one point with her two droids... and then it's seemingly not until hours later after night has fallen and Sabine has spent an eternity figuring out the map (and probably had time for a nice nap as well), that they finally attack and steal the thing.
I mean what the heck were they waiting for?? It didn't seem to matter to Shin whether the map had already been opened or not.

I dunno about that. Clone Wars alone has some pretty heavy stuff - some of which had to be censored for Cartoon Network back in the day. There's straight up cold blooded murder of civillians and unarmed/unsuspecting foes/previous allies, someone getting gutted by Zabrak horns, actually slavery (none of that fancy having a house a 3 square meals a day like Ani and his mum), torture, too many beheadings to count, Anakin almost beating someone to death with his fists cause he got jealous, some mild sexually charged stuff and not to mention the multiple suicides.But it's in no way gratuitous.

Live action Star Wars, like the OT, like the PT is family entertainment.
The cartoons like Rebels or Resistance is definitely more focused on a younger kids audience.
Sone of the cartoons, like Bad Batch, is arguably aimed at a older kids audience, but still a kids audience.
