Wouldn't this "gray" character phenomenon be someone like Han, Leia, Tarkin, Boba Fett, Lando, Jabba, Padme, Jango Fett, General Grievous, Finn, Poe, Jyn, etc. who are key characters in the universe but neither a Jedi nor a Sith?

Ugh, Gray Jedis... Internet fanfic made canon (and then unmade alongside the rest of the EU). It's literally the "I want to have my cake, and eat it too" trope. Grays are just the edgy 90s heroes all over again...
