It's much more complicated to practically shoot with helicopters, motorcycles and stuntmen on a real location than it is to cgi a robot.
The real problem with doing Sentinels is explaining why there are Senitnels when none of the storylines have gone there. And I actually don't think watching Wolverine go to town on a Sentinel in live action would be anything but lame. In animation it can be incredibly dynamic - in live action it will just look like it should be a cartoon.
Unrelated to robots, I was thinking it would have been cool if Wolverine had actually lobotmized Sabretooth in the scene where he has his fist under his chin. I think it was right before Age of Apocalypse (paging The Mike) that Wolvie skewered Sabertooth through the head and he ended up going kind of feral and simple. It would have been a good lead in to the big lumbering goon he is in X1.
