I voted for cheddar, but like almost all of them except for Swiss; I kinda hate Swiss cheese. I love cream cheese, especially in pastries and baked in brownies.

I forgot - cream cheese makes mashed potatoes even better. I know you are thinking, "How can mashed potatoes be made better since they are so awesome on their own?" Well, whip cream cheese into your mashed potatoes and you will know what I am talking about (if you haven't tried it, already).
