For this sculpt I paint the flesh under the stubble as normal, but use black for the stubble. For a five o'clock shadow I might do what you talked about but Andy B. was good enough to sculpt the stubble for us in this case.

It was funny, as soon as I unwrapped him from bubble wrap I was like, hey this looks like John Locke's ear. Oh wait, this must be Andy Bergholtz's sculpt from a couple years back.

For this guy all I did was play barber and paint the beard. I think it came out surprisingly well considering there is no sculpted beard supporting it.

I recently had the time to revisit the very first 1:6 head I ever painted: my AvP Elder...

Painted in February 2009, my main intent was just to clean up the glue around the quills and match the paint of the body. I painted his mouth and eyes but left the dreads alone and didn't try anything fancy.

This time around, I wanted to rearrange the quills -- give him that goatee look, paint the quills themselves, paint the dreads (which took, like, forever) repaint the eyes more Predator-like, revisit the flesh to cheat it to look more like in the movie while still retaining enough of the original pallet so that it looks like it fits in the with the body (as I did not want to take him apart and paint the whole body), touch up the tattoos, and just generally bring to him my 4 years of experience and expertise to make him look overall like a 2.0.

I hope everyone likes him.
