Why did the Saints give up Cooks

Funny thing is, the Saints constantly give up good offensive players but it doesn't seem to matter. They always find a way to get yards and score points no matter what. Their problem over the last seven or eight years or whatever, has been on the defensive side. The most baffling decision I can remember is when they gave up Darren Sproles, after he established records that no player in the NFL that ever reached. But they adjusted.
