I think prior to Re 2 Sherry had already had injections and stuff from Willy Birkin. Going by the whole story she told after Re 2 she was taken and experimented on and what not to see why she was immune to the virus

Bringing Sherry back in Re 6 could of been a perfect reason to bring back G like its been laying dormant all this time and has re-awakened and took over Sherry, or shes birthed some new ultimate creature and its up to Leon to take it/her down or what not. Even throw Claire in there.

I think the G-virus was supposed to give the type of powers Wesker eventually had and could also breed the same powers with a DNA match (sherry) but as the G-Virus was not fully developed it became unstable and the host turned into what we know as G.

What happened to irons and Ben was the G-virus rejecting the host as it was not a DNA match from the G that planted the embryos (Birkin) and they became G adult body's (basically monsters without the power of G).

As for Sherry because the G-virus was genetically compatible with her she would of became the same mutation as William if Claire and Leon hadn't of give her the vaccine in time.

Again just what I believe as we obviously didn't see what a successful G-embryo would turn out to be.
