I understand them wanting to keep Smaug's design secret for as long as possible but surely having Smaug all over posters and TV spots etc. would help promote the film better.

Probably but keeping it a secret also leaves some wonder for folks to discover when they see him for the first time.

Red/Golden is how Tolkien described him. He looks a little more golden there but on screen he may have a better mix.
