Which collection (1/6 scale) should I build first? Star Wars or Iron man?

I wouldn't be going all in with Iron Man. There's just so many variants and even the re done Die cast versions are going to be expensive to pick up.

I am personally collecting Star Wars, but also have some of the Avengers figures and may pick up a few of the different Iron Man suits that are a little more unique looking, such as Shotgun and Bones.

Going all in for both is not on the table for me. I'm not even all in for Star Wars either. I don't think it's necessary to pick up every figure from the line.

Depends what you like more. You tell us!

From a story and character point of view Star Wars is my pick; however from the pure appearance point of view I think iron man looks cooler.

Well, it's up to you, for me it would be none of them!

Star Wars: go for it if you like collecting action figures of the Stuntmen who replaced the stars of the first movie (judging by the look, Yan Sala, Chotobacco, Luc Squidwalker and Benjamin Kenobol)

Iron Man... Well if you like your collection to be always the same figure...

Although the Iron Man figures are very impressive, and look substantial on the shelf, I think if you're going to have only one collection, I'd go Star Wars.
The design of the characters provides more variety of looks and colors on the shelf. It would make the shelf more interesting to look at, both for yourself, and any visitors.
