I think that really sums it up, I was 16 when Phantom Menace came out, I was graduating college when Revenge of the Sith came out, some of the elements of the PT that may seem silly and stupid as teenagers and adults in the PT may have been seen as gold to children of that era, and I have little nieces right now who adore the ST.
As much as those who grew up on the OT might feel a sense of ownership over the franchise because our love for it made it a success and the PT and ST wouldn't happen without that coming before it, we are not the audience thought of most when writing and crafting these new stories. The more successful works do strike a balance, and that's what makes Mando work great, his character really calls upon qualities and an era that means more to adults watching, and then on the flip side, you have Grogu and such to give the newer generations something.
Odds are, nothing new will ever fully live up to our older visions of where Star Wars should go, you can either enjoy it or not.
What I care most is about continuity, and I will always take issue when things are done that break the continuity of all prior work.
