Sounds very yummy. I roasted beets last night for smoothies. Oh, we already mentioned that. But for lunch I had beet and lentil hummus, and I'm telling you it was the bomb diggity.

By the way, I heard that vegans will eat goat cheese because the goats are supposed to only give milk when they are happy!

There are dishes I've had that would change your mind. My mother hates beets as well and even she thought they were amazing. One component was a cylinder of dehydrated beet. I'll post some pics tomorrow when I get to work.
