The change in flesh tones happened in 2004 to the licensed property lines. It happened for Star Wars just before the Cloud City set (with Lando) came out.

As far as the fancy new minifigs, I prefer the old ones that you could still tell right away are LEGO. The new ones with molded breastplates, printed everything, and unique rubber heads are a little too playskool for me. Eh, that is progress I suppose, and keeps new collectors buying sets just for minifigs. It works out for playset builders like me, since I can buy figureless sets to expand my dioramas and scenes.

Funny that talk about the UCS sets. A couple of years ago, I sold all of mine (had pretty much all the star ships) except for the X-Wing, MF, and Darth Vader's TIE. Always buy LEGO when they're available at retail. They're good deals at retail, aftermarket, not so much. Even my old Castle and Pirate sets have never sold below original MSRP on the secondary market.

It cost around $400 to get the Falcon parts. It's cheaper to substitute some parts in a different color than what came in the original set, especially the interior framework - certain colors go higher than others if they're rare. You have to do a lot of planning when doing this, so you have as few shipments as possible due to postage.

Bricklink is the best place to get the parts and an inventory for the sets. Below are some pics of the UCS snowspeeder I put together by ordering the parts on Bricklink.

I've sold many Star Wars sets on eBay and always do really well on them.
Some sets have sold for 300-400 percent of their original cost. In fact I'm about to list a bunch of sets Friday to get some cash for some more sideshow swag.

If you aren't in any hurry to sell, you should also look into Bricklink.net, which is a LEGO only marketplace run by and for fans. The selling fees are much lower (I think they're a third what eBay costs), plus I find the buyers are much less flaky, since they tend to be part of the fan community. You can also set your own price, but since you are "competing" against other sellers, you have to be realistic about pricing or else your stuff will just sit. Buying tends to be a better experience, too.

Thank you guys! Just curious as to how to protect myself as a seller... I figure it's easy for some jerk to take a few parts then complain that the set was incomplete.

So, hypothetically how much do you guys think it would cost to buy the parts to a UC AT-ST on brick link? I put the order together then just follow the online instructions, right?

That's pretty much all you need to do.
Once you've got all the bricks on-hand, you're good to go.

Congratulations on the new Bday gift VASith, it is an awesome set. I suggest once you have it put together that you find someplace to display it that is at eye-level or lower. The only available spot I have for mine right now is on top of one of my bookcases and it can not be appreciated properly, you've really gotta be able to view it from the upperside. I have my original UCS SD on top of another bookcase and it works and looks great up there cuz it's tall, so you can still see the upper details and the docking bay underneath.

I have that Cloud City set binky, and the minifigs have yellow skin, the Lando is the only one that doesn't. But you're right, cuz the Owen Lars that came in the Sandcrawler set in 2005 has a flesh-tone not yellow head. So maybe the end of 2004/beginning of 2005 was when the total changeover happened.
