It's a very long story, but most of that show is bull____ really. What he proposes can only be done in the schools that the state is willing to give them big time funding, which most won't. At one school he wanted $100,000 just to TRAIN the school cooks how to cook like he does.
I would love to see him come to our system and try to do what he does with the money, limited staff and limited time that they have. Schools just can't afford it. Our school goes by state guidelines. They have vegetables and fruit with every meal. They only have pizza once a week and fries once a week. The only thing that is fried is the french fries. Everything else is baked. Are a lot of things processed? Yes, but that doesn't make it all bad. You have to do what you can afford to do. If you want all freshly steamed vegetables and fresh, free range chickens in your kid's school meals, then pony up the taxes to pay for it. If you don't like what your kids are eating.......PACK THEIR LUNCHES!
