Ha, my wife and I went through a similar situation, very similar.
My wife is 26 and two years ago she was aware of SW somewhat through pop culture references (she knew the line "I am your father" but didn't know it was Darth Vader who said it) but hadn't seen any of the films all the way through before we met and didn't really "get" what the whole thing was about.
So I had her watch the SW films in this order: ANH, ESB, TPM, AOTC, ROTS (at the theater), ROTJ. I didn't want the twist of ESB spoiled by the prequels but I also wanted her to enjoy ROTJ as the true finale to the saga so that's why I chose the unorthodox viewing order for her first time through the saga.
The result:
She found ANH and ESB mildly entertaining after one viewing, but the PT *really* caught her interest. So much so that her appreciation for ANH and ESB improved dramatically. She mentioned how unemotional the ANH saber duel was when she first saw it but when she saw ANH for the first time after ROTS it had much more of an impact. Its amazing how much Obi-Wan and Vader make reference to their encounter on Mustafar in ANH.
The same held true for ESB, particularly the Dagobah sequences.
So when it came time to watch ROTJ for the first time after seeing ANH, ESB, TPM, AOTC, and ROTS she was entertained but not quite on the level of the Prequel Trilogy...until Hayden's Anakin ghost showed up at the end. Her mouth hit the floor and she was so overwhelmed there were tears in her eyes!
We both absolutely love the entire saga of SW now (I was having some reservations after the apparent direction of the PT but the CW cartoons and ROTS set everything straight) and I'm guessing that as upcoming generations watch the films in Episode order instead of by release date the "OT vs. PT" mentality will give way for a more all inclusive appreciation of the saga.
