Been looking at this camera for a while now. Quick ? Though. Stepping motor on the lens. Do I need/want that?

Stepping motor on a lens allows for faster autofocus. Canon has a new version that allows for silent AF(so sound not picked up in video)

The body is really the less important part for getting good photos, the lens is more important. I would say make sure your sold on Canon before buying lenses, sucks to have to rebut lenses because you want to switch to Nikon (or other company). I would make sure the body has the basic feature you want though. The higher end bodies aren't always going to have features you need.
 
Great photo. Can you really feel/see the difference just by taking a standard photo with the Mark II?

I can. But I guess it all depends on which camera you are comparing it to. I have a friend who shoots with the 7d with the same EF lens I have (28-135), and I can tell it's sharper and the blacks are blacker. I would love to get my hands on an L series lens to see how those turn out.
 
The Mark II is awesome, I haven't shot pictures with it but I have shot video with the II and the mark III. Both are out standing. I personally take all my photos with the Canon 60d. Here's a few of my shots.
