I would attribute that more to the strength of James Earl Jones' vocal performance giving emotion to Prowse's movements, which I guess does prove that if the vocal performance is strong enough, you can keep the mask on. It has to be damn good though.
V for Vendetta I haven't seen for ages, so I can't really comment, but again, a vocal performance by an actor of Hugo Weaving's caliber has a lot to do with it.
If an actor can't portray emotion through a mask, then he's a bad actor. David Prowse is a dimwit and even he could do it in Vader's mask.
