Yeah I hate being asked that. Because the person asking it has no expectations of any response other than 'I'm good, thanks' or 'not too bad' and manys a time I'd rather not lie.

I usually say "I'm must be butter, because I'm on a roll, YEEHAW!!!"

I prefer "Have a nice day" because you can then respond, "I'll have any kind of day I want!"
