What is the parts to make the Gimli again?

You'll definitely need the Dragon in Dreams (DiD) Gimli figure for the body, clothing and weapons. The body will require some modification and you'll find instructions on how to do so in this thread.
Now, you have a couple of options for the rest of the figure. For the hands/gauntlets, head, helmet and boots, you can either go with Toybiz's "soft" version or their rotocast version. Both have their pros and cons.
The rotocast parts are of slightly smaller scale than the "soft", and it's really a question of taste as to which ones look more in-scale with the rest of the figure. The fine details on the armoured parts and helmet are slightly better with the rotocast, but I found the fit of the helmet to be much better with the "soft". Also of note is that the rotocast Gimli has swivel joints at the wrist, whereas the "soft" does not.
That's pretty much it for the basic figure. If you want to "flesh" him out a bit, it's a good idea to get a 1:6 scale fat suit to give the figure some extra bulk, and many customizers have chosen to use Ignite's 1:6 mail hauberk to replace the god-awful sparkled version that comes with DiD's release.
I went with a combination of all three base figures. The DiD for the body, weapons and clothes, the Toybiz "soft" version for the head, helmet, gauntlets and boots and the Toybiz rotocast version for the shoulder armour.
