I'm not sure how the EU banthas manage to have equivalent offspring, but I have a feeling that Darth Maul's EU reanimated torso might have something to do with it. Or maybe it's EU Palpatine's clone.

I believe that he landed in the back seat of somebody's speeder and was later nursed back to health. He retired from active Jedi duty and was found years later living in retirement in Cloud City. There, he was fortunate enough to locate Luke's severed hand and had a medical droid attach it to his wrist. After getting his saber arm back in working order, he relocated to Tatooine and devoted himself to the task of ridding the Jundland Wastes of all womp rats smaller than two meters in size.
