Well hold on now it's actually not that simple.
Just turning the color off will leave you with a messy grey (noooooooo!) scale tone.
The studio colorist actually have a method to their madness with making the frame pop even at full greyscale.

Fury Road was a hit and miss. Some fans prefer the color version because of the vibrant colors while others enjoyed the melancholy that the B&W offered.
But with Logan it comes off as a gimmick to me.
Some films benefit from B&W and I'm sure there's an "artistic" reason so many films in the 50's and 60's were in B&W despite having the technology to film them in color. Sure, it was probably cheaper to shoot in B&W and color being a new gimmick, it probably took some time for filmmakers to master the use of color effectively in the same way they utilized B&W film, so using B&W was also probably a safer choice, but I do think some films just look better in B&W too.
Obviously, a lot of films benefit from color, like the Wizard of Oz, which also uses B&W, but a movie like Logan would look good in B&W. Logan's costume is a black and white suit, and there are many scenes that were film with enough shadows and certain camera angles that can be enhanced by the B&W.
Is this now trendy? They take away 3D... and give back B&W? Those muthas!
