Also doesnt a limited edition size make something FINITE like your point on gold?.

The limited edition collectibles are artificially finite. This is because they stop making them when production is still running and demand still exists. They can ALWAYS make more. No one is stopping them. You can't make more gold, unless you believe in alchemy. I heard it was possible to turn lead into gold with a whole roomful of lead to get just a speck of gold, but the lead costs more than the gold in that case. Something doesn't have to be made from expensive materials to be very valuable if it is a handmade original like the Mona Lisa. Paint and canvas isn't very expensive, but because it is hand made by a famous artist, it's worth a lot of money.
If something comes out of a mold, then you can make as many as you want, cheaply. This, in addition to the fact that they are made from plastic polystone means that they aren't inherently that valuable. If it was made from a mold and it was made from gold, platinum, copper, or bronze, then it would be inherently valuable. If it was hand sculpted and made of really inexpensive materials it could be very valuable. Inexpensively produced and inexpensive materials equates to a pretty low valued thing.
