Medium-rare is my favorite. I went to a restaurant yesterday, ordered one Medium-rare, and it came back fully cooked. I think they left it in the skillet too long... it was so dry. Too bad I didn't have the patience to have them correct my order.

Only thing you can do with something that overcooked is either smother it in steak sauce and swallow the pieces whole like a duck to get it over with as soon as possible, or make a flip-flop out of it.

However, my wife is one of the "black on the outside, gray in the middle" people. I have to start her steaks a long time before mine.
