Man, I love me some cheesesteak (with real cheese and not that Cheese Whiz crap, though) :drool. But, generally, steaks are pretty tricky to get right. You have to start off with a really good quality cut, or it's going to turn out pretty poor, regardless of how you cook it.

I know what you mean, though. Whatever you do, stay away from Applebee's or any of the chain restaurants. I ordered a medium-rare steak from Applebee's last week and it was like biting into rubber, I couldn't even swallow it.
 
Ugh I ****ing HATE cheese whiz steaks. They're the redneck version of it IMO :lol I usually order from a very reliable sandwich shop near me and get Pizzasteaks with Mozzarella cheese.

Do you like rare steaks? I never understood that. I'm not living on the Serengeti... it's got to be well done.
 
Funny, there's this Italian sandwich shop right across from where I work, that makes some pretty damn good cheesecakes with provolone cheese :lol. It takes the shop owner like 20 minutes to cook it up, but it's really marinated in some kind of special sauce. He tops it off with green peppers, olives, and some other pretty interesting stuff.

Well, I like my steaks medium-rare. It's red on the inside (might be a bit bloody and warm), but charred on the outside with a crispy crust. When you cook a steak rare to medium rare, you can immediately tell the quality of the beef, and the meat retains all of its taste. But, the problem with well done, is that you're essentially destroying the fibers of the meat and leaking out all of the juices, so all that remains is a dried, gray husk. You can take a very, very expensive cut like Kobe beef, and a cheap piece of **** from the grocery store, and if you cook them both well done, you won't be able to tell the difference between either of them. Well done, regardless of quality of the beef, will always taste the same. If steaks aren't your thing, just don't eat them. Eating a well done steak is a sin of the highest possible caliber, and a chef at a good restaurant might even refuse to take your order :lol.

You just answered your problem. A well done cooked steak is like shoe leather. Most people go with medium to medium rare.
 
While rare to medium rare is technically partially cooked, it's perfectly safe to eat, and the taste is significantly more robust and juicier. All of the dangerous bacteria on a steak is on the surface, and that's always killed by the heat when cooking.

The basic meats that you should cook thoroughly are fresh water fish (they can have parasites or worm eggs), pork (same thing), and poultry (because undercooked chicken meat is stink and rank). Beef is a no-no. Unless you're doing a ground beef recipe (or flaming some burgers on the grill), then it might be acceptable to cook it "well done". Personally, I like my burger patties with a slight tinge of pink on the inside. Generally speaking, if the color of the beef on the inside looks the same as it does on the surface (gray as hell or burnt to a crisp), then someone has done ****ed it up. Might as well throw it in the trash or give it to a hungry dog.
 
Not a knowledgeable person on cooking meat, especially steak but heard that marinated or cured meat might be an option if he prefer fully cooked. Marinated and especially cured meat result in the meat being broken down a bit. And so the meat wouldn't be so leathery. Not sure how the taste would be like but some even eat raw slices.

I eat my steaks medium and my prime rib medium rare. I like raw beef singed over a fire. Like roasting marshmallows.

Nah, I couldn't send it back because I ordered it to go.

I always order my steaks medium rare. In my experience (at least from the restaurants I visit), they either get it just right, or they cook it for too long until it's medium. Fire grilled beef is tasty :drool.
 
I hate steak no matter how it's cooked. It doesn't taste anywhere close to good enough to compensate for how ugly it looks on a plate or how crappy it smells.
 
I hated steak as a kid because it was always overcooked. Now, I want it seared on both sides, and that's about it (but not cold!)

Quality cuts are fundamental. Anything but the best parts of the cow belongs in a cheesebuger or a cheesesteak (provolone or mozarella---no American).
