These are fantasy movies. Also, you're going way beyond what the OP was stating. He was talking about her fighting/piloting skills being Star-Wars plausible.

You can learn by fighting against real enemies, as she is demonstrated doing in the movie.

But even within the fantasy movie, it still goes against the in-universe logic of her current force skills being plausible. She’s gone past any Jedi before in a week without any training, ignoring all the rules of how it’s been done thus far, mastered force powers and lightsaber fighting and surpassed kylo who’s been trained by two of the most powerful force users for 20 years.

It’s not star wars plausible.

Did you ever hear the tragedy of SNIKT "the wise"? I thought not. It's not a story Khev would tell you. It's a SSF legend. SNIKT was so powerful and so wise he could use the threads to create fan fiction. He had such a knowledge of the SW canon, he could even keep the ones he cared about from liking the sequel trilogy. The dark side of the forum is a pathway to many abilities some consider to be unnatural. He became so powerful... the only thing he was afraid of was losing his fan fiction, which eventually, of course, he did. Unfortunately, Rian Johnson killed him in his sleep. It's ironic, he could save others from the ST, but not himself.

Find a pilot in the real world, then ask him/her if they can fly every plane/helicopter or any type of mechanical object ever made, and be one of the best at it too......

Find a skilled hand to hand fighter/weapons expert. Ask them if they can master every form of fighting and every type of weapon ever made within days...

This isn't a if you can do one you can do em all type of scenario..
 
Maybe Rey is an avatar for someone more powerful?

Maybe this is all a lead-in to Disney's (and Cameron's) Avatar 2, 3, 4, 5, 6, and the series.
 
Rey’s “training” came from a lifetime of surviving as a scavenger. She mastered hand-to-hand combat and piloted a variety of rustbuckets. Her awakening Force powers merely augmented those existing skills.

I will add that even if we accept the above premise what's the appeal of watching such a character? One who, by default - from the very outset - has overcome every obstacle she faced and simply continues to do that throughout these movies. We're now 2 films in and...she just can't seem to not win...and she's hardly going to lose in the final movie either is she.

Especially with a staff being one of the safest weapons to handle (not even an edge to cut yourself with, or a pointy end) as opposed to lightsabers, probably one of the most dangerous weapons for the user ever created in fiction.
The staff is like a giant hilt, it's all safe, from tip to tip. The lightsaber has a hilt that's not even 1/4 of the total length, and anything beyond that safe area will kill you or vaporize whatever touches it.

I can’t watch Raiders of the Lost Ark. College professor uses a whip. Do you know how many real world blah blargh thjpppttttt....

I wouldn't argue the spontaneous mind-trick. But they did set up some of the stuff that's being bandied about.

Also, the Kylo thing - it's been said repeatedly. Proficient staff fighter against badly wounded lightsaber student. Not implausible in my book.

What are the stats on crossbow-injured, emotionally unstable and quite chilly force users against scrappy junk peddlers again?

You may want to request deletion again my friend, forum posting doesn’t seem to agree with your health as you seem to be having a stroke and cannot form full arguments or have the energy to do a little research. And as we all know health comes first. Take care and I wish you a speedy recovery.

So by your logic, every made up piece of fiction ever written has no point in being critiqued, because, its fiction?
