It's a symbol of his rage calming down. Somewhere along those lines. Wing chun is a very passive style of fighting dealing with interception and reaction. It's one of the core fundamentals and philosophies embedded into Bruce Lee's Jeet Kune Do (Way of the Intercepting Fist)
You missed LJ's point I believe. He was saying that in the film Ip Man's top 2 knuckles are the one's torn and bleeding, when in Wing Chun you're taught vertical fist straight punches which would leave the other 3 knuckles torn and bleeding instead.
