Personally, I haven't colored mine as I was lucky to get one of the lighter colored ones anyway.
But for the fur, the biggest difference (in my opinion) is made by gently pulling the fur away from under the jaw and the neck. In packaging, it comes with the hair really stuck down on the face and snout. Pulling that fur away, so it looks more like a beard, has the biggest impact. For the eyes, ya, they are deep set, so use the comb the figure comes with to come away from the eyes. Then the rest is really more to do with which Chewie look you like (ANH, ESB, ROTJ).
Also, and again this is just personal opinion, I would be wary of "overcombing" the figure. Some of the pics I've seen, they've combed Chewie so much that his fur looks more like well-conditioned human hair. Almost a Jennifer Aniston look or something.

There is something I have missed, here... "lighter colored ones"? Do you imply by that, that there is a noticeable variability among units of ANH HT Chewbie?? Noticeable enough so that there are better units than others, lighter-coloured ones being better!?

I understand Chewbie comes with a lot of product on him to tame the hair. Have you had to remove it? How?

Is there any actual difference between ANH and ESB Chewbie? As far as I knew, it was not until ROTJ that Chewbie got a more modern hairdo, with hair over the eyes drawing an arc up to the temples.

In your pics, Chewbie's forehead looks a bit too long, I think... but it is almost OK.

What head are you using for Han on that pic, btw? It is not accurate, but extremely cool! It is not HT Stormtrooper-disguised Han, right? Yours looks better than proto pics of that particular figure...!

"Lighter Colored Ones" - ya, it seems there was quite a lot of variety in the ANH Chewie that you might receive. Some seemed to have received ones with very dark fur on the face, and others are more like mine. I don't know if it was a specific batch or what. All I can say is that I bought mine as one of the first-run, two-pack with Han. But if you look back through the thread, you will see quite a variety, and some of the folks who got dark ones, colored their Chewie with various pastels and such.
I didn't use anything to remove product. For the fur around the snout, I used my fingers to gently pull the fur away from the jaw and under the mouth. Then used the comb to shape the mustache and the head. I'm not skilled at customizing and such, so I was more worried that if I remove product, I wouldn't be able to futz or manage it properly.
I'm pretty sure if you google ANH Chewbacca or ESB Chewbacca, you'll see shots that show a difference in the hair. In-hand, I'm fine with Chewie's forehead.

Yes, for Han that is the HT Stormtrooper disguise head. No mods at all. I had to get a shorter neck peg to fit it properly on the ANH body (I got a HT Thor Dark World neck peg from eBay), but I think it looks great! I'm very happy with that change...

Like the individual figs, there was also a re-release of the H&C set, which I think is still available at some places.
The Han head is from the Han in Stormtrooper Disguise fig, which I pre-ordered 'cause I needed a ANH Stormtrooper anyway, and I had missed out on the previous HT Stormtrooper releases. So I was never intending to use the Han head with the Stormtrooper figure anyway, so it worked out rather nice!

So far, I've just used the standard "lift chin slightly, before turning slowly/carefully" method, and haven't seen any scratches yet. I'll have to take picks from the side/back when I get home later...
 
Wow, that sculpt really captures the character. I can't believe sometimes that this is the same guy who played Indiana Jones and Rick Deckard!

Gods, I'd like to get that damned highly-detailed-interior stormtrooper helmet... I have seen pics of it, and there seems to come with some weird accessory that allows using it as a regular helmet (put it on the fig, attach it to the helmet, etc). Is that correct? Does it work well?

Ya it comes with a black foam-covered plastic... mushroom?-shaped.. piece that has a hole for the neck peg. Then it works like any other 1/6 head.
I don't have pics of the inside of the helmet, but here it is on the trooper body. Fits fine, articulates fine...

Still the best looking Chewy released by Hot Toys. I've even considered picking up a second one.

Yeah, I already did after the TFA one came out. I saw the TFA one at a LCS recently and OMG - even worse than pics have shown. Which is really saying something. It really reminded me of the old Hasbro furred Chewy. Very strange.

This one still has the duck bill thing and really does need the lightening that people have done, but with the head posed at the rght angle, it hides maybe 50% of the issues.
 
As soon as you pull the fur out from under the chin/jaw/duckbill, and make it look more like a beard, he looks great. So much better than the other ones...
